Ingredients
Dry
- 2 cup All-purpose flour
- 1 Tbsp Baking powder
- 2 Tbsp Sugar
- 0.5 tsp Salt
Wet
- 1.75 cup Plant milk (almond, soy, or oat)
- 1 Tbsp Apple cider vinegar
- 0.33 cup Coconut oil (melted)
- 1 tsp Vanilla extract
Method
- 1. Preheat your waffle maker according to the manufacturer's instructions.
- 2. In a small bowl, mix the plant milk and apple cider vinegar. Let it sit for 5 minutes to curdle and create vegan buttermilk.
- 3. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- 4. Add the vegan buttermilk, melted coconut oil, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix (some lumps are fine).
- 5. Lightly grease the preheated waffle maker with cooking spray or a little melted coconut oil.
- 6. Pour the batter into the waffle maker. The amount will vary depending on your machine, but usually about 1/2 cup per waffle.
- 7. Cook until the waffles are golden brown and crispy, typically 4-5 minutes.
- 8. Serve immediately with maple syrup, fresh berries, and vegan butter.
Chef's notes
For extra crispy waffles, keep them warm in an oven preheated to 200°F (90°C) directly on the wire rack while cooking the rest of the batch.
