Vegan Mushroom Coffee Protein Smoothie

Ingredients

Dry

  • 1 Tbsp Mushroom coffee powder
  • 1 Tbsp Cocoa powder (unsweetened)
  • 1 Tbsp Chia seeds

Other

  • 1 qty Frozen banana (peeled and sliced before freezing)
  • 0.5 cup Ice cubes

Wet

  • 1 cup Unsweetened almond milk
  • 1 Tbsp Peanut butter (creamy, unsalted)
  • 1 Tbsp Maple syrup (optional, for extra sweetness)

Method

  1. 1. Pour the almond milk into the blender first to prevent the dry ingredients from sticking to the bottom.
  2. 2. Add the frozen banana, peanut butter, maple syrup, mushroom coffee powder, cocoa powder, and chia seeds.
  3. 3. Add the ice cubes to give the smoothie a thicker, colder texture.
  4. 4. Blend on high for 45 to 60 seconds until the mixture is completely smooth and creamy.
  5. 5. Pour into a tall glass and serve immediately. Optionally, garnish with a light dusting of cocoa powder.

Chef's notes

You can easily substitute almond milk with oat, soy, or cashew milk. If you don't have a frozen banana, use a fresh one and double the amount of ice.
