Vegan Peach Lemon Lime Popsicles

Refreshing and tangy summer popsicles made with fresh peaches, zesty lemon, and bright lime juice. Naturally sweetened and completely vegan.

Ingredients

Dry

  • 1 tsp Lemon zest (freshly grated)
  • 1 tsp Lime zest (freshly grated)
  • 0.125 tsp Sea salt (just a pinch to enhance flavor)

Wet

  • 2 cup Fresh peaches (pitted and sliced)
  • 0.25 cup Lemon juice (freshly squeezed)
  • 0.25 cup Lime juice (freshly squeezed)
  • 0.25 cup Agave nectar (or maple syrup, adjust to taste)
  • 0.5 cup Coconut water (or plain water)

Method

  1. 1. Wash, pit, and slice the peaches. Leave the skin on for extra color or peel for a smoother texture.
  2. 2. In a blender, combine the sliced peaches, lemon juice, lime juice, agave nectar, and coconut water.
  3. 3. Blend on high until completely smooth. Taste and add more sweetener if desired.
  4. 4. Stir in the lemon zest and lime zest.
  5. 5. Pour the mixture evenly into popsicle molds, leaving a little room at the top for expansion.
  6. 6. Insert popsicle sticks and freeze for at least 4 to 6 hours, or until completely solid.
  7. 7. To release, run the outside of the molds under warm water for a few seconds before gently pulling out the popsicles.

Chef's notes

For a fun texture, finely dice an extra half peach and drop the pieces into the molds before pouring the blended mixture.
