Fresh Peach Salsa

A sweet, spicy, and refreshing vegan salsa made with ripe peaches, red onion, jalapeño, cilantro, and fresh lime juice. Perfect for dipping with tortilla chips or topping your favorite vegan tacos.

Ingredients

Dry

  • 0.5 tsp Sea salt (to taste)
  • 0.25 tsp Black pepper (freshly ground)

Other

  • 3 qty Peaches (ripe, pitted and diced)
  • 0.5 cup Red onion (finely diced)
  • 1 qty Jalapeño pepper (seeds removed and finely minced)
  • 0.25 cup Fresh cilantro (finely chopped)

Wet

  • 2 Tbsp Lime juice (freshly squeezed)
  • 1 tsp Agave nectar (optional, if peaches aren't sweet enough)

Method

  1. 1. Wash all produce thoroughly before beginning.
  2. 2. Dice the peaches into small, bite-sized pieces and place them in a medium-sized mixing bowl.
  3. 3. Add the finely diced red onion, minced jalapeño, and chopped cilantro to the bowl with the peaches.
  4. 4. Drizzle the fresh lime juice and agave nectar (if using) over the fruit and vegetable mixture.
  5. 5. Sprinkle the sea salt and black pepper evenly over the top.
  6. 6. Using a large spoon, gently toss all the ingredients together until they are well combined.
  7. 7. Taste the salsa and adjust the seasoning, adding more salt or lime juice if necessary.
  8. 8. Let the salsa rest in the refrigerator for at least 15 minutes before serving to allow the flavors to meld together.

Chef's notes

For a spicier salsa, leave some or all of the jalapeño seeds in. You can also add diced red bell pepper or tomatoes for extra color and texture. Serve with sturdy tortilla chips.
