- 2 qty Russet Potatoes (medium-sized, scrubbed clean)

- 1 Tbsp Olive oil (or other high-heat neutral oil)
Method
- 1. Wash and scrub the potatoes thoroughly. Cut them into uniform 1/4-inch thick fries. Peeling is optional.
- 2. Place the cut fries into a large bowl of cold water and let them soak for at least 30 minutes. This removes excess starch and helps them get crispier.
- 3. Preheat your toaster oven air fryer to 400°F (200°C) on the air fry setting.
- 4. Drain the potatoes and pat them completely dry with a clean kitchen towel or paper towels. This step is crucial for achieving a crispy texture.
- 5. In a large, dry bowl, toss the potato fries with olive oil until they are lightly and evenly coated.
- 6. In a small separate bowl, mix together the salt, paprika, garlic powder, and black pepper.
- 7. Sprinkle the seasoning mix over the oiled fries and toss again to ensure they are evenly seasoned.
- 8. Arrange the fries in a single layer in the air fryer basket or tray. Do not overcrowd the basket; cook in batches if necessary to ensure even cooking.
- 9. Air fry for 15-20 minutes, shaking the basket or flipping the fries halfway through the cooking time, until they are golden brown and crispy.
- 10. Serve immediately with your favorite vegan dipping sauce like ketchup or vegan aioli.
Chef's notes
For extra crispy fries, soak the potatoes for a longer period (up to 2 hours), changing the water once. Ensure potatoes are completely dry before adding oil. Feel free to experiment with other seasonings like onion powder, chili powder, or dried herbs like rosemary.
