Ingredients

Dry

  • 0.5 cup All-purpose flour
  • 0.25 cup Cornstarch
  • 1.5 cup Panko breadcrumbs (Ensure they are vegan)
  • 1 tsp Garlic powder
  • 0.5 tsp Smoked paprika
  • 1 tsp Salt

Other

  • 2 qty Large yellow onions (Sliced into 1/2-inch thick rings)
  • 1 can Olive oil spray (For baking)

Wet

  • 1 cup Unsweetened plant milk (Almond or soy preferred)
  • 1 Tbsp Apple cider vinegar

Method

  1. 1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. 2. In a shallow bowl, whisk together the plant milk and apple cider vinegar. Let sit for 5 minutes to curdle into vegan buttermilk.
  3. 3. In a second shallow bowl, mix the flour, cornstarch, garlic powder, smoked paprika, and salt.
  4. 4. Place the Panko breadcrumbs in a third shallow bowl.
  5. 5. Take an onion ring, toss it in the flour mixture to coat, shake off excess, dip it into the vegan buttermilk, and finally press it into the Panko breadcrumbs until fully coated.
  6. 6. Place the coated onion rings in a single layer on the prepared baking sheet. Spray the tops generously with olive oil spray.
  7. 7. Bake for 10 minutes, flip each ring carefully, spray the other side with olive oil spray, and bake for another 10 minutes until golden brown and crispy.
  8. 8. Serve immediately with your favorite vegan dipping sauces.

Chef's notes

For extra crunch, double-dip the onion rings in the buttermilk and breadcrumbs.
